Fried Sage
This is one of our favourite appetiziers. We use only fresh sage. Not only are the leaves very tasty, they are also expectionally large.
1 large egg (U.S. extra large)
75 g/ 2 1/2 oz/ 1/2 cup plain (all purpose) flour
960 ml/32 fl oz/4 cups vegetable oil for deep-frying
18 large sage leaves
Salt
Beat the egg with 60ml/2 fl oz/1/4 cup water and salt to taste. Place the flour in a bowl and gradually add the egg mixture, beating with an electric mixer.
Heat the oil in a deep frying pan to 180 °C/350 °F, or until a cube of bread turns golden brown in 1 minute. Dip the sage leaves in the batter. Add them to the oil and fry for 2 minutes until golden and crispy. Remove with a slotted spoon and drain on paper towels. Arrange on a platter and serve immediately, while still hot.
