Little Tomato Cups with Tuna

Plum tomatoes are perfect for the recipe, but otherwise medium-sized salad tomatoes can be substituted. You can also replace the tuna fish with boiled peas or beans such as canellini.

6 plum tomatoes
210 g/7 oz canned tuna fish in oil or brine, drained
6 tbsp Mayonnaise, or good-quality commercial
1 tbsp capers in vinegar, drained and chopped
50 g anchovy fillets in oil, drained
1 tbsp chopped fresh flat-leaf parsley

Cut the tomatoes in half lengthwise and scoop out the seeds. Flake the tuna and combine it with the mayonnaise, capers and anchovies.
Fill the tomatoes with the tuna mixture and sprinkle with the parsley. Arrange on a platter and serve.
