Creamy Garlic Dip

Ingredients (serves 4-6):
1/2 cucumber, de-seeded, diced and blanched
1 garlic clove, crushed
100 ml (3 floz) extra virgin olive oil
1 ripe tomato, de-seeded and very finely diced
15 ml (1/2 floz) white wine vinegar
200 ml (7 floz) crème fraîche
salt & pepper

Almost any reasonable olive oil will suffice. An expensive oil may be wasted as the flavour will be smothered.
