Fresh Goat’s Cheese Wrapped in Pear & Courgette with Tomato Vinaigrette & Basil Olive Oil

Ingredients (serves 4):
2 tomatoes, coarsely chopped
salt & pepper
2 springs thyme
1 small bunch basil
4 thick slices fresh goat’s cheese
2 courgettes, very thinly sliced
2 pears, very thinly sliced
4 tbsps extra virgin olive oil

Preheat oven to 200 °C (400 °F)
Season the tomatoes with salt, pepper, thyme leaves and some chopped basil leaves. Coat each slice of goat’s cheese with some of this mixture and wrap with alternating slices of courgette and pear.
Blend the rest of the basil with the olive oil in a liquidizer, then pass through a fine sieve. Combine with the remaining tomato mixture.
Carefully sauté the wrapped cheese in olive oil in a pan, then bake in the oven for 1 minute.
Place a slice of wrapped cheese on each plate and dress with the basil oil and tomato vinaigrette. Serve immediately.
