GUACAMOLE WITH CHILLI PEPPER AND CARDAMOM OLIVE OIL

Ingredients for four people:
2 ripe avocados
1/2 an onion
1 tomato
2 sprigs of coriander
Juice of 1 a lime
Chilli pepper and cardamom olive oil

Preperation:
Chop the avocado
Chop up the onion, the peeled and deseeded tomato and the coriander. Mix everything with the avocado and the limejuice.
The guacamole must be prepared immediately before serving as the pulp oxidises easily on contact with air.
Add the chilli pepper and cardamom olive oil to taste.

Mexicans accompany this dish with tortillas made from fried maize, which they spread with the guacamole.
