Garlic & Mayo Dip
Ingredients (serves 4):
1 egg yolk
30 ml (1 floz) white wine vinegar
200 ml (7 floz) extra virgin olive oil
2 garlic cloves, crushed
salt & pepper
1/2 red chilli, thinly sliced
Whisk the egg yolk and the vinegar together in a mixing bowl. Continue whisking as you drip in the oil until the mixture thickens.
Add the garlic and seasoning. Transfer to a serving bowl and decorate with the chilli rings.
