Grilled Peppers with Garlic & Olive Oil

Ingredients (serves 4):
2 green peppers
2 red peppers
4 garlic cloves, crushed
1 bunch coriander, chopped
15 ml (1/2 floz) extra virgin olive oil
salt & pepper

Place the whole peppers on a wire rack over a tray and grill for a few minutes on each side.
Heat the olive oil in a saucepan and when it is very hot put in the peppers, along with the garlic and the coriander, and stir constantly.
Cook until the peppers turned golden, add salt, pepper and a little more olive oil. Serve hot.
