GREEN BEANS WITH FOIE-GRAS WITH FRESH ROSEMARY OLIVE OIL
Ingredients for four people:
200 gr. of fine green beans
4 slices of ham
Toasted maize
1 piece of foie-gras
4 spoonfuls of fresh rosemary olive oil
Chervil
Sea salt
Preperation:
The beans: Cook them until they are al dente and cool them so they keep their colour.
The ham: Cut it into fine strips.
The foie-gras: Using a peeler, cut it into small slices.
Finishing and presentation:
1. Mix the green beans with the ham and little toasted maize and fresh rosemary olive oil.
2. Place the beans on the centre of the plate and over the pieces of foie-gras.
3. Season with the fresh rosemary olive oil, the minced toasted maize, chervil and sea salt
