WATERMELON AND TOMATO SOUP WITH FRESH BASIL OLIVE OIL

Ingredients for four people:
For the soup:
6 tomatoes
1/4 watermelon
salt and pepper

For the dressing:
12 cubes of watermelon
12 cherry tomatoes
12 basil leaves
Fresh basil olive oil

Preperation:
1. Cut the tomatoes and the watermelon into pieces keeping six 2 cm. thick cubes of watermelon.
2. Chop it all up finely and strain it to remove ant lumps or seeds. Season it with salt and pepper.
3. Scald the cherry tomatoes for a few seconds with boiling water, let them cool and peel them.
4. Place 3 cubes of watermelon, 3 tomatoes and the soup in the plate.
5. Dress it with fresh basil olive oil and decorate it with the fresh basil leaves.
