| Miso soup
Serves 8-10
Water 2 litres
Hon Dashi 50g
Miso paste 100g
Konbu - 1 sheet
Wakame 10g
Silken Soft Tofu 150g
Shiitake Mushrooms (dried, no stalks) 30g
Kokkioman Soya sauce 30ml
Green Onions for garnish
Soak mushroom heads for 30 minutes in warm water, then slice thinly. Chop green onions.
Bring water to boil then add Hon Dashi and Konbu to pot. Simmer for 5 minutes the remove Konbu. Return to low simmer and add miso paste, Wakame ( cut into 1 cm pieces!), soya sauce and mushrooms. Simmer under low heat for another 10 minutes then add in tofu and garnish with green onions.
