BONITO TARTAR WITH SOYA AND GINGER OLIVE OIL

Ingredients for four people:
400 gr. of fresh back of bonito
Soya and ginger olive oil
2 bunches of chives
Crystal salt
4 bunches of soya shoots

Preperation:
1. Chop the bonito up finely, eliminating the fibres and mixing a little soya and ginger olive oil
2. Using 2 spoons, make up the two portions of bonito tartar

Finishing and presentation:
1. The plate is finished off with the bunches of soya shoots, a little chopped young onions and dressed with the soya and ginger olive oil.
