SCALLOPS A LA GALLEGA WITH FRIED GARLIC OLIVE OIL
Ingredients for four people:
4 scallops
1 dl of fried garlic olive oil
1/2 dl of olive oil
2 ripe tomatoes
1 slice of bread
1 spring onion
Cayenne pepper
Preperation:
1. Scald, peel and deseed the tomatoes. Cut them into chunks. 2. Fry them with a little olive oil, salt and a pinch of sugar.
3. Also fry the bread and break it into little pieces.
4. Cut the onion into round slices.
5. Clean the scallops, removing the coral. Keep the shells.
Finishing and presentation:
1. Season the scallops with salt and pepper and sauté them.
2. put a spoonful of tomato, bread, onion, a little Cayenne pepper and a splash of fried garlic olive oil on them.
