We import this mustard from our French moutardier near Beaune. It has all the piquancy which you would expect from a true Dijon. Amazing with steak and an excellent culinary mustard when added at the end of your cooking.

Wholegrain Black Mustard
This strong, aromatic mustard is made from simultaneously ground black and yellow mustard seed and carefully chosen spices, thus preserving all the essential oils. We use only natural vinegars. A good general purpose mustard, it is excellent for cooking in stews, soups and sauces, and as flavouring in mayonnaise.

Beer Mustard
We use 6X, brewed by 'Wadworth' of Devizes, to make this toothsome mustard. Slightly sweeter than most, it contains no artificial colouring or preservative and is excellent with a good Wiltshire ham, pork pie or with cheese. With a good sausage and a pint of 6X at your local pub it can bring you perceptibly nearer to Elysium!

Strong English Mustard
This strong hot mustard is in the Victorian tradition of English mustard making. It has been tempered by the judicious use of spices and wine vinegar, but contains no artificial colourings or preservatives. It is good with traditional English food such as hand-raised pork pies, real Wiltshire ham, and particularly, a good local sort of sausage!

Organic Tarragon Mustard
Whole organically grown seeds and spices are simultaneously ground and immediately mixed with organically grown tarragon and cider vinegar so that none of the volatile essential oils are lost. Very good in vinaigrettes and mayonnaises, particularly with cold chicken. Try lightly coating slices of aubergine before grilling them - a very interesting taste.

Rosemary Jelly
This classic Tracklement for lamb is also very good with poultry or pork. Vegetarians will find it useful when glazing vegetables. The fact that we use fresh rosemary helps to keep the taste clean and the texture soft.

Thai Jelly
This classic Thai combination of red and green chillies, lemongrass, garlic and coriander gives a quick karate chop to stir-fried meat, fish or vegetables. It makes a brilliant dressing for warm salads or is good with cold white meats or cheese.

Cranberry and Port
Made from whole berries without added water; this traditional tracklement for turkey is given extra savour and intensity by a liberal measure of good port. With rich meats, like hare and venison, we prefer to serve this sauce hot with an added dash of port and the pan juices mixed in to make a super gravy.

Mint Sauce Concentrate
This real mint sauce, without colours or artificial preservatives, is a concentrate, and should be diluted with white wine or cider vinegar before use. It is light years away from the nasty green acidic mess which rightly horrifies our Gallic neighbours.

Tomato and Pepper Ketchup
Our tasty tomato ketchup - was known as Red Devill - is grown-up tomato sauce. Its fresh taste is due to our use of fresh red peppers and chillies, rather than powdered ingredients. We use it in cooking as a marinade for white meat and fish as well as as a superb table sauce with fish and chips or bubble and squeak.

Apricot and Fresh Ginger Chutney
We use fresh ginger root to prevent the harsh taste of ginger powder zapping your taste buds before you've experienced the apricot! Thus a warm glow gently suffuses the palate without killing the flavour of cheese, cold meat, pork pie or cold fowl with which you may well use it. It is also excellent with curries as a change from mango chutney.

Cucumber and Pepper Relish
This colourful relish is made from a combination of fresh cucumbers with red and green peppers, which have been pickled and lightly spiced with mustard seed. In the tradition of "Bread and Butter" pickles it has a sweet-sour tang which makes it perfect for those of us who relish our burgers.

Piccalilli
This sweet-sour piccalilli reminds me of my grandmothers' home-made version. It is not so acid or bitter as the normally accepted commercial pickles. As you will see from the ingredient list, it contains no artificial colouring or preservative, and should be kept refrigerated after opening - that's if you don't finish it at once!

Lemon Pickle
A piquant, spicy pickle made from fresh lemons, salted overnight, then simmered with garlic, ginger and chillies. This traditional tracklement gives a sharp bite to whatever it accompanies. We recommend using it with chicken, fish or a good strong cheese. Mix it with yoghurt or crème fraiche to partner curries.

Chilli Jam
Our powerful chilli jam is made from fresh chillies, unlike cheaper sauces made from chilli powder. The result is a build up of heat which doesn't knock out your taste-buds, but enhances the flavours of the meat, fish or cheese with which it is eaten and adds zest to your cooking without overwhelming the ingredients.

Garlic and Chive Mustard
This medium-ground wholegrain mustard is mixed with fresh English garlic and chives to delight onion enthusiasts. As you might expect, it is an excellent cooking mustard both for pre-coating meat or fish prior to cooking and in mayonnaises, dips and vinaigrettes. It does not contain any artificial colourings or preservatives.

Organic Mint Jelly
